Sustainable Food Consumption: Profile of the Gaucho Consumer of Organic Milk and Derivatives

Abstract

Consumption of organic foods continues to grow globally, especially in the last two decades, however the literature still does not fully understand its drivers, especially in peripheral regions. In this context, this study aims to analyze the profile and intervening variables that influence the consumption of organic milk and derivatives in the State of Rio Grande do Sul, Brazil. The methodology used is linked to the quantitative one, through the application of a closed questionnaire, together with the unit of analysis of 1,997 consumers of organic foods, among which 424 consume organic milk or derivatives. The reliability of the responses was determined based on Cronbach's alpha, while homogeneity was measured using the Kolmogorov Smirnov and Shapiro-Wilk tests. To verify the strength and direction between variables, the Pearson test was used. The analysis of the results points to a prevalent profile of women, single, without children, with incomplete higher education, between 21 and 30 years old. The motivations for consumption are predominantly chemical-free production and in terms of health. Discussions highlight the importance of understanding consumer behavior for organic products considering regional cultural particularities and recognizing the type of product in order to support the development of more sustainable agro-food models.
