Abstract

Honey is a viscous and sugary liquid produced by honey bees, a food product produced from the nectar collected from flowers and can also be produced from secretions from living parts of plants or from excretions of plant-sucking insects on the living parts, which the bees collect, transform, combine with specific substances of their own, store and let mature in the combs of the hive. Thus, honey because it has antioxidants contributes to the health of individuals. The study reports the comparative analyzes carried out between the physical-chemical and microbiological composition of samples of honey from bees, produced and marketed in the municipality of Anápolis. The analyzed samples showed significant difference in some evaluated parameters, highlighting the humidity, reducing sugars and ph.
